Cream of Chicken Soup
This creamy and comforting soup is a classic favorite. It’s easy to make and can be served as a main course or as a side dish. The combination of chicken, vegetables, and cream makes for a delicious and satisfying meal.
Ingredients:
- 2 tablespoons butter
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 tablespoons all-purpose flour
- 4 cups chicken broth
- 2 cups cooked chicken, diced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup heavy cream
Instructions:
- In a large pot, melt the butter over medium heat.
- Add the onion, garlic, carrots, and celery and cook until softened, about 5 minutes.
- Stir in the flour and cook for 1 minute.
- Add the chicken broth, chicken, thyme, oregano, basil, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 10 minutes.
- Stir in the cream and cook for an additional 5 minutes.
- Serve hot.
