Delicious Beef Enchiladas for a Mexican-Inspired Meal

Beef Enchiladas

These beef enchiladas are a delicious and easy-to-make Mexican dish. The combination of beef, cheese, and enchilada sauce makes for a flavorful and satisfying meal. Serve with a side of Mexican rice and beans for a complete meal.

Ingredients:

  • 1 pound ground beef
  • 1 onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (10-ounce) can enchilada sauce
  • 1 (4-ounce) can diced green chiles
  • 1 (8-ounce) package shredded Mexican cheese blend
  • 8 (8-inch) flour tortillas

Instructions:

  1. Preheat oven to 350 degrees F.
  2. In a large skillet over medium-high heat, cook the ground beef and onion until the beef is browned and the onion is softened, about 5 minutes. Drain off any excess fat.
  3. Add the garlic powder, chili powder, cumin, oregano, salt, and pepper to the beef and onion and stir to combine. Cook for 1 minute.
  4. Add the enchilada sauce and diced green chiles to the beef mixture and stir to combine. Cook for 2 minutes.
  5. Remove the skillet from the heat and stir in 1/2 cup of the cheese.
  6. Spread 1/2 cup of the enchilada sauce in the bottom of a 9×13-inch baking dish.
  7. Spoon 1/3 cup of the beef mixture into the center of each tortilla. Roll up the tortillas and place them seam-side down in the baking dish.
  8. Pour the remaining enchilada sauce over the top of the enchiladas and sprinkle with the remaining cheese.
  9. Bake for 20 minutes, or until the cheese is melted and the enchiladas are heated through.
  10. Serve with your favorite toppings, such as sour cream, guacamole, and diced tomatoes.
