Beef Enchiladas
These beef enchiladas are a delicious and easy-to-make Mexican dish. The combination of beef, cheese, and enchilada sauce makes for a flavorful and satisfying meal. Serve with a side of Mexican rice and beans for a complete meal.
Ingredients:
- 1 pound ground beef
- 1 onion, diced
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (10-ounce) can enchilada sauce
- 1 (4-ounce) can diced green chiles
- 1 (8-ounce) package shredded Mexican cheese blend
- 8 (8-inch) flour tortillas
Instructions:
- Preheat oven to 350 degrees F.
- In a large skillet over medium-high heat, cook the ground beef and onion until the beef is browned and the onion is softened, about 5 minutes. Drain off any excess fat.
- Add the garlic powder, chili powder, cumin, oregano, salt, and pepper to the beef and onion and stir to combine. Cook for 1 minute.
- Add the enchilada sauce and diced green chiles to the beef mixture and stir to combine. Cook for 2 minutes.
- Remove the skillet from the heat and stir in 1/2 cup of the cheese.
- Spread 1/2 cup of the enchilada sauce in the bottom of a 9×13-inch baking dish.
- Spoon 1/3 cup of the beef mixture into the center of each tortilla. Roll up the tortillas and place them seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the top of the enchiladas and sprinkle with the remaining cheese.
- Bake for 20 minutes, or until the cheese is melted and the enchiladas are heated through.
- Serve with your favorite toppings, such as sour cream, guacamole, and diced tomatoes.
