Teriyaki Chicken

Ingredients:
- 2 boneless, skinless chicken breasts
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1 teaspoon cornstarch
- 2 tablespoons water
- 2 tablespoons vegetable oil
Instructions:
- In a medium bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, ginger, and garlic. Set aside.
- In a small bowl, whisk together the cornstarch and water. Set aside.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5 minutes per side, or until cooked through.
- Add the soy sauce mixture to the skillet and bring to a simmer. Simmer for 5 minutes, stirring occasionally.
- Stir in the cornstarch mixture and cook for 1 minute, or until the sauce has thickened.
